Happy Duck Day AKA Turkey Day

This past Thanksgiving we were cooking our first duck in Zion National Park. Now the real frighting thing was that we had to cook this in our Confection Microwave oven in our Motorhome! So on top of learning how to cook a duck, we added the extra stress of doing so for the first time in a microwave oven. Our expectations were not high, but in short it turned out really good and made for an awesome soup afterwards. I'll share the recipe in the recipe section of my blog site, which is quite simple. We were very surprised at how well it browned the breast of the duck and how quick it cooked. We actually slightly over cooked it, fortunately my wife had me check it while it still had almost 45 minutes to go according to the oven cook time. So remember, these microwave convection ovens require less time to cook than a normal oven takes.

It was a nice relaxing trip, we did a lot of walking and eating, but because we had been to Zion so many times before we did not actually go into the park. We also did a lot of eating, but doesn't every one do that for Thanksgiving.

On Friday we woke up rain at the park, but it was cold and cloudy. We figured there was snow in the higher elevations and sure enough come Friday night we could see the snow on the mountains, beautiful! Saturday we wok up to some really cold temperatures, but it was not too bad in the sun. Eating dinner on the patio with our dog, Jack, was chilly to say the least but the food at Balcony One in Virgin UT was amazing. This is a must visit if your in the area. The snow in the mountains was so white and fresh; its amazing how fast the weather can change here this time of year.
